A Northeast Chinese barbecue ritual, edited for an urban table.
The Xita Origin
西塔 · 起源Xita — the “West Pagoda” quarter of Shenyang — is Northeast China’s most legendary barbecue district, where Korean-Chinese grill culture has been perfected over generations on open charcoal. That neighborhood is where our fire was lit.

Fire as Ritual
炭火 · 仪式Everything begins with live charcoal. We grill over real fire because heat is not just a cooking method — it is the ritual that renders fat, caramelizes the crust, and carries smoke into every cut. Nothing here is finished in a convection oven.

From Shenyang to 8th Avenue
沈阳 · 到纽约We carried that taste memory across the world and set it down in the middle of Midtown Manhattan. The same boldness, the same sauce-led seasoning system — edited for a New York table, steps from the theaters of Broadway.

Meat is the vessel. Fire is the ritual. The soul lives in the sauce.
