Xita — the “West Pagoda” quarter of Shenyang — is Northeast China’s most legendary barbecue district, where Korean-Chinese grill culture has been perfected over generations on open charcoal. That neighborhood is where our fire was lit.

Everything begins with live charcoal. We grill over real fire because heat is not just a cooking method — it is the ritual that renders fat, caramelizes the crust, and carries smoke into every cut. Nothing here is finished in a convection oven.
